1 SHALLOT
2 CLOVES GARLIC
3 SAGE LEAVES
CORIANDER
BRING A PAN OF WATER TO THE BOIL, PEEL THE SWEET POTATOES AND CUT INTO 1.5 CM SLICES. ADD TO BOILING WATER AND COOK FOR 7-8 MINUTES UNTIL ALMOST TENDER. DRAIN AND RUN UNDER COLD WATER, DICE THE PAR-COOKED POTATOES AND PUT TO ONE SIDE. FINELY CHOP THE SHALLOT AND GARLIC ADD TO A PAN OF HOT OIL COOK UNTIL SHALLOTS START TO CARAMELISE THEN TIP IN THE SWEET POTATOES AND TOSS TO MIX. SEASON LIGHTLY AND COOK FOR 5-6 MINUTES, STIRRING UNTIL THE POTATOES ARE TENDER . LIGHTLY CRUSH THE POTATOES WITH A FORK OR POTATOE MASHER AND ADD THE CHOPPED SAGE AND CORIANDER MIX THEN SERVE.
